THE PERFECT VALENTINE'S DAY PORT SAUCE FOR A STEAK
1 tbsp of rapeseed oil
1 banana shallot or 2 small round shallots, finely diced
3 sprigs of fresh thyme, leaves removed
60ml Just A Splash Port
60ml beef stock
knob of butter roughly 10g
plenty of black pepper
In a frying pan add the rapeseed oil, thyme and the diced shallots. Fry gently for a few minutes to soften.
Once soften increase the heat and add the port, let sizzle and boil slightly before adding the beef stock. Let simmer for a few minutes to thicken.
To finish the sauce, add a squeeze of half a lemon and the knob of butter. Season with a few good turns on the cracked black pepper (depending how peppery you like it) and some sea salt. Serve immediately with steak.
