A SHERRY GRENOBLE SAUCE FIT FOR A DOVER SOUL


Ingredients

1 Pouch of Just A Splash Culinary Sherry
50g butter 
100g gherkins
100g shallots
100g caperberries
½ lemon, juice & zest
1 handful of chives
Salt & pepper to taste

Method

1 Chop the shallots, caperberries, gherkins and chives very finely, keeping them separate
2 Warm the butter on a medium heat
3 Sauté the shallots gently for 5 minutes, then add the gherkins and  caperberries to warm up
4 Add Just A Splash culinary Sherry and bring to the boil over a medium-high heat for 1 - 2 minutes
5 Add the lemon juice, lemon zest and chives
6 Season to taste and serve
